Pre-heat your oven to 325.

Sift the flour, baking powder, baking soda and salt together.

Cut the butter and shortening into small pieces and drop into the flour.

Using your fingertips, knead the fat into the flour mixture until it is well distributed and the flour clumps lightly like crumbs.

Form a well in the center of the flour.

Pour in the buttermilk.  

Mix just until the dough forms.  

Pour out the dough onto a clean floured surface press the dough into a ball.

Sprinkle the top with dough as well to prevent sticking.

Flatten the dough with your hands, then fold in thirds onto itself.

Repeat about 5 times.

Using your hands or a rolling pin, flatten the dough to about 1" thick.

Square up your dough if you plan to make square biscuits. You do not need to do this if you plan to use circular biscuit cutters.

Cut your biscuits as desired.

If you have scrap, gently mold it together and continue cutting biscuits until you are done.

Cut into 12 pieces.

Place on a baking sheet and bake at 325 for 15-20 minutes until lightly golden brown.

While they are baking, you can make some Sawmill Gravy.

Melt your last tablespoon of butter and brush on top of the biscuits when you remove them from the oven.

Serve with butter, jam or other toppings, or smother with Sawmill Gravy
