Fresh Rhubarb. While it looks like red celery (it also comes in bright yellow) it has a simple tart vegetable flavor.

 

Chopped rhubarb. It is used more for its tanginess than its flavor.

 

Mixed peaches, rhubarb, sugar and flour.
