I got this idea from Buca di Beppo and created this recipe so I could have stuffed shells any time.

I use Turkey Italian Sausage but you can use any ground meat you prefer. You could also replace half of the ricotta with tofu and chances are no one would notice. You can use store bought pasta sauce but making your own is usually healthier and cheaper. I use my own Sausage Spaghetti Sauce.

It's easier to mix the ricotta and raw sausage together but then you'll end up with a more meat-loaf type center. If you prefer a crumbly center, you can cook the sausage first before mixing it with the ricotta.
