Sawmill Gravy

Sausage gravy drenched over biscuits... now there's some hearty breakfast comfort food!

Brown the sausage.

When it is done, remove the sausage, leaving the fat behind.
 

Depending on your sausage, you may need to remove some fat or add some butter or oil. Your target is about 2 tablespoons of fat.

Return the oil to the heat and add the flour to make the roux. You'll only want to cook the flour to the white or blonde stage.
 

Pour the milk in batches, whisking constantly to keep the gravy smooth and prevent lumps.  

When the gravy starts to simmer, add in the sausage. Mix and allow it to simmer again. Season with salt and pepper and turn off from heat.
 

Sawmill Gravy is perfect for serving over biscuits.
